Red Winemaking - The winemaking facilities of Rioja producer Marqués de Riscal include both steel and oak for fermentation and aging. The fermentation tanks are all small enough to ferment wines on a block-by-block basis. Note how they stand well clear of the ground to facilitate drainage by gravity.

Over the past 30 years, wine glasses have moved from regional tradition to technical shapes, with today’s emphasis clearly placed on physical and aesthetic qualities that have been engineered to suit specific styles of wine.
Citrus fruit
This is a very common taste descriptor in France, where agrume is attributed to the fresh complexity of many young white wines. It is often more complex than a specific citrus fruit aroma (one or more of limonene, citonellol, linalool).
Honey
Almost every fine white wine becomes honeyed with age, but particularly great Burgundy, classic German Riesling, and botrytised wines (phenylethylic acid).
Tomato
We tend to think of tomato as a vegetable, but it is really a fruit and, although not a common feature in wines, it is found in bottle-aged Sylvaner and, with blood-orange, in Ruby Cabernet. Also found in Merlot, Pinot Noir, and various Italian wines (trans-2-pentanal).
Viloet
Violet can often be found as part of the finesse on the finish of Cabernet-based red wines, notably Bordeaux, especially from Graves. It is possibly more tactile- based than a volatile aroma (ionones).

About the Author
Tom Stevenson has been writing about wine for more than 40 years. He has won 33 literary awards, including Wine Writer of the Year three times and The Wine Literary Award, and America’s only lifetime achievement award for wine writers. In 1998, he was the first person to publish a 17th-century document proving that the English invented sparkling Champagne six years before Dom Pérignon set foot in Hautvillers. This ensured his Christie’s World Encyclopedia of Champagne & Sparkling Wine also made history as the only wine book to warrant a leader in any UK national newspaper (The Guardian, 14 October 1998). In 2011 he was inducted into the New York Wine Media Guild’s Hall of Fame. He has written 28 books, the most important of which have been published internationally by more than 50 publishers and translated into over 25 languages. Additionally, he conceived and was the contributing editor of Wine Report. His Sotheby’s Wine Encyclopedia (now The New Sotheby’s Wine Encyclopedia) has sold over 700,000 copies worldwide.
Orsi Szentkiralyi is a Hungarian-born wine professional based in London. She is a Doctor of Law, specializing in protected origin of wine.

She is a judge and ambassador at the International Wine Challenge, in charge of tasting quality control at the Champagne and Sparkling Wine World Championships, and Head of Tasting at the wine app Wotwine. - Reviewed in the United States on May 31, 2022I have several wine books, and this is by far the best one... and the largest. Clear and concise with nice colorized pages and pictures to support the topics. Very professional layout and is well-organized. Covers some information many books only graze over or skip (like vine soils, vine training, vineyard operations, and many other things. The only downside I found was that it is 3.5kg (~1.6lbs)... very big and heavy. But that's the price one pays for a high-quality book. That won't stop me from using it.

- Reviewed in the United States on November 1, 2020I pre-ordered and man am I blown away by this book. The information is VAST to say the least and the pictures and grafts are beautiful and really capture the message that the editors are trying to get across. I am a collector or wine literature and I have been waiting for this new edition for almost a year. I am very happy to say after spending a few hours skimming through, it’s has not disappointed.
A must for anyone in the wine business or who is serious about learning the real depths of viticulture around the world.
Cheers.

- Reviewed in the United States on January 24, 2025Man, I really wanted to give this five stars because this is the perfect book on wine for the oenophile that wants to know everything. Amazing collection of knowledge. However, beware that by purchasing online and having shipped to your house it may arrive damaged. Certainly not gift-worthy, and I’d be hesitant to display my copy because the front of the dust jacket looks like something slid up and down on top of it prior to (and possibly during) shipping. Additionally, the binding along the entire spine had already come apart when I received it. Fortunately I know how to repair that and the hassle of returning it outweighs the hassle of shoving some book glue down the spine. For the value of the book, I would expect some protective measures to be taken to preserve it such as a plastic cover, bubble wrap, anything at all. The corner of the front hard-cover was bent/damaged, and the dust jacket had additional damage on the corners and edges. Great buy overall, but mildly frustrating that it showed up more banged up than expected.

4.0 out of 5 stars Great book but shipping packaging needs to be changed!
Amazing book and the most thorough guide I have ever see or read... however for such an expensive and heavy book I wood have liked it to be shipped in some sturdier packaging as it arrived a bit used looking as the packaging was soft and the book is a heavy hardcover and was a gift. A bit disappointed.
